Veggie Pieces "S" 1 kg
Shallots 250 g
Carrots 250 g
Curly-leaf parsley 80 g

White wine 40 cl
Tomato sauce 80 cl
Olive oil
Salt and Pepper

Peel and finely chop the shallots.
Peel and finely dice the carrots.
Chop the parsley.
Sweat the shallots in the olive oil in a high-sided frying pan for 1 minute.
Add the carrots and sweat for another 2 minutes.
Pour over the white wine and leave to reduce by half.
Add the tomato sauce and the Veggie Pieces “S”, leave to simmer for 20 to 25 minutes.
Adjust seasoning.
Sprinkle with chopped parsley just before serving accompanied with rice or tagliatelle.
